Holiday traditions are so much fun to have with your family. Easter is no exception. This year consider adding some simple and fun easter sugar cookies to the line up. Everyone loves a good sugar cookie, and with the eggs sitting in top it makes a festive looking little nest. Not to mention adding a little extra chocolate to the cookie that I’m sure nobody will complain about.
The tricky part of this recipe is resisting the urge to pop a mini egg in your mouth every few minutes and save some for the cookies.
Ingredients for Easter Sugar Cookies:
- 1 package of chocolate mini eggs (keep in mind every cookie has 3 eggs on it)
- 1 cup sugar
- 1/2 cup butter (at room temperature)
- 1 egg
- 1 1/2 tsp vanilla
- 2 cups flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp milk
- Extra sugar for rolling the dough
Tips & Tricks:
- Rolling the Dough: Use a spoon to scoop out some dough and then roll it between your palms to get a roughly 1 inch ball. The smoother the ball, the smoother the final cookie will look.
- Placing the eggs: Wait a minute of 2 before adding the eggs to the cookies. This will give them a chance to cool a little first. If you add the eggs too soon the heat will cause them to crack.
- Freeze: I wouldn’t recommend trying to freeze and then recook these cookies After they have been baked. The chocolate will melt everywhere. You could however freeze the dough and bake the sugar cookies at a later date.
