If you’re a fan of traditional greek salads you will love this Mediterranean Chickpea Salad. It’s got all the traditional flavours you think of like feta cheese, and kalamata olives. The best thing about this salad is how quick and hearty it is. All of the ingredients are very stable and will last for multiple days in your fridge. This means you can prep this salad in advance and eat it with your lunch all week.
Mediterranean Chickpea Salad is a great well balanced meal that is complete vegetarian protein, fibre and healthy fats. Chickpeas a great source of plant based protein, and the rest of this salad is made of nutritious and delicious veggies! You can have this salad ready in under 20 minutes!
Ingredients:
- 2 (14 oz.) cans chickpeas, strained and rinsed
- 1/2 english cucumber, diced
- 1/2 red onion, diced
- 1/2 bell pepper, red, yellow or orange, diced (pick your favourite colour)
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and halved (optional thought this does add to the greek flavour)
- 1/4 cup parsley, finely chopped
- 1/4 cup olive oil
- 1/2 lemon, juiced
- 80 grams feta cheese, crumbled
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Tips & Tricks:
- Chopping Veggies: Try and chop all of your cucumbers, onions, and peppers into small pieces (similar in size to the chickpeas). This will help ensure you get a little bit of everything in each bite.
- Veggie Swaps: You can easily swap out any veggies in this recipe for something thats more to your liking. Carrots, celery, and zucchini all would work great in this recipe.
- Storage: Pack this salad in an airtight container and store in your fridge for up to a week.
