Looking for a low carb lunch or snack option? These cucumber egg salad boats are a great option. Using the cucumber as your “bread” substitute provides a nice refreshing crunch to every bite. If you someone you know is low carb or even keto this recipe will be perfect for them. One large english cucumber will make enough for 2 servings.
Ingredients:
- 5 hardboiled eggs
- 1 english cucumber
- 2.5 tbsps of mayonnaise
- 1 teaspoon of Dijon
- Everything but the bagel seasoning
- Salt & pepper to taste
- Optional* you can add fresh herbs on top
- A chopped pickle is also a great add.
Tips & Tricks:
- Cucumbers: Make sure to get all of the middle seeded part of the cucumber out so that you can easily fill it with egg.
- Alternates: Not a fan of cucumbers try using a bell pepper hallowed out or an avocado.
- Eggs: I find that hard boiling fresher eggs makes them easier to peel.
- Meal Prep: If you are going to make this in advance keep the egg salad in a container until you are ready to assemble. The cucumber should be cut only when you are ready to eat.
