Breakfast casserole is the perfect recipe for a holiday or when you have friends and family visiting. It makes an entire 9×13 pans worth and it can easily be prepped the night before or quickly thrown together in the morning. Its rich and creamy and can easily be adapted to whatever kind of meat you have in the house. Bacon, chunks of ham or even ground beef can be used as added protein and flavour in this recipe. This breakfast casserole is hearty and filling. With a nice thick layer of potato it has a subtle and comforting flavour.
You can easily spice it up by using hot breakfast sausage, adding hot sauce or chili flakes to the mixture.
Ingredients:
- 24 ounces frozen shredded potatoes
- salt and pepper
- 12 eggs
- 2 cup half and half
- 1 teaspoon season salt
- 1 1/2 cup cheddar cheese grated
- 1 1/2 cup pepper jack cheese grated
- 2 cup cooked breakfast sausage
- green onion for topping
Tips & Tricks:
- Potatoes: if you want to use fresh potatoes be sure to rinse and dry the potatoes thoroughly. They will add extra moisture to the dish. That being said it does work well.
- Milk/Cream: you can use milk in a pinch. You will loose in the richness of this recipe but it will save you a few calories.
- Cheese: Pepper Jack cheese is essentially to adding some additional spice to the this recipe. If you use mozzarella as a replacement add some additional seasoning.
- Toppings: Scallions provide a nice bright zing to the dish, alternatively I like to add a little hot sauce to really wake up the flavours.
- Baking: Bake until all of the egg is set in the middle and the potato is cooked though. You can test this with a toothpick and see if it comes out clean and without resistance.
