Everyone needs a good smoothie recipe to wake with. Blueberry Avocado Lemon Smoothie is creamy and rich from the avocado and yogurt with a slightly tart flavour from the lemon. Some of my friends have said it reminds them of cheesecake flavour. This recipe is gluten free and can be easily adjusted to make it vegan.
Making nutrient rich recipe like this is always a good meal idea. It’s got healthy fats, protein, fibre, antioxidants and carbohydrates. This smoothie should leave you feeling full and energized for the day.
Ingredients:
- 1 lemon (zest from whole, juice from half)
- 2 cups almond milk, unsweetened (or other plant-based milk)
- 2 cups blueberries, fresh or frozen
- 1/2 cup avocado chunks, fresh or frozen
- 1/2 cup vanilla greek yogurt
- 1 tsp vanilla extract
- 2 Tbsp chia seeds
- 1/4 tsp cinnamon
- Splash of maple syrup
- unflavoured or vanilla protein powder
- Ice, until desired temperature reached (if not using frozen ingredients)
Tips & Tricks:
- Blending: If your struggling to blend all of the ingredients than try adding some more liquid. It could be more milk or even water.
- Add Some Greens: Adding a handful of spinach to this smoothie adds some extra fibre and iron. Use any greens you have around could be a cucumber or even arugula.
- Make It Vegan: Swap out the yogurt for a dairy free alternative and you are good to go!
- Make Ahead: You can store the ingredients for this smoothie in a prepped bag in your freezer. When ready add it to your blender along with milk. You can also blend the smoothie and store in a mason jar for 1-2 days. Make sure to shake or stir the mixture before drinking again since the smoothie will separate.
- Make Smoothie Cubes: You can freeze your smoothie in an ice cube tray and pop them out to defrost or mix with milk for an easy on the go smoothie.
