Red cabbage soup really is a show stopper to look at. It has such a rich purple colour from the red cabbage. When you add the acid from the lime juice to the soup it brightens the soup and turns it more magenta than a blue purple. Red Cabbage soup is very mild in flavour but can be spiced up by adding more garlic, ginger, salt, pepper and dill. It is perfect for a cold day or someone who has a cold and want something soothing.
Ingredients for Red Cabbage Soup:
- 6 cups red cabbage roughly chopped
- 1 cup potato cubed
- 3 garlic cloves roughly chopped
- 1 medium-sized red onion roughly chopped
- 3 tablespoons chopped fresh dill
- 3 tablespoons lime juice adjust as per taste
- 3.5 cups vegetable stock
- 1 cup almond milk/ any plant-based milk
- 1 tablespoon olive oil
- 1/2 teaspoon ginger powder
- 1 teaspoon ground black pepper
- Salt as per taste
Tips & Tricks:
- Cooking: Wait until the cabbage is fully cooked and floppy when lifted up. This will help it blend more smoothly.
- Blend: Use a food processor or a mixer to blend the mixture until your desired texture is reached.
- Flavour: This is a very mild flavoured soup. Perfect for if you have a cold and don’t want anything that will upset the stomach.
- Dill: Add dill at the end or blend it into the soup to add more flavour.
