Is it cake? Is it breakfast? Stuff can be two things right. Banana Chocolate chip baked oats technically are not cake but this recipe is so light any fluffy that it might as well be. It’s the perfect recipe to wake up with in the morning. Nice melty chocolate chips in every bite with the subtle background taste of banana.
Baked oats have recently blown up on tiktok and I figured it was about time I gave it a try. Baked oats are super customizable. You could add berries to this recipe. Top it with your favourite nut butter. This recipe comes together so quickly, just through everything in a blender, add some chocolate chips and bake.
Ingredients:
- ½ cup rolled oats
- 1/4 cup unsweetened almond milk
- ½ ripe banana
- 1 egg
- 1 Tablespoon maple syrup
- ¼ teaspoon baking powder
- 1 Tablespoon peanut butter
- Pinch of cinnamon
- Pinch of sea salt
- 2 Tablespoons chocolate chips, for a low sugar or vegan option try LiLy’s brand chocolate chips. I like to add a few more on top as well.
Tips & Tricks:
- Oats: Quick oats or rolled oats will work in this recipe. Oat flour would also work in place of the raw oats since you are essentially creating oat flour when blending.
- Ramekin: Use a small single serving oven safe bowl for this recipe. If you choose to make a larger batch make sure to pick a bigger dish if the batter is too high in the dish it will make the cooking process longer. This recipe makes roughly 8oz in batter.
- Mixing: Plus the ingredients in a mixer or food processor (this is the one I used), until it is very smooth and no large chunks or whole flakes of oat remain.
- Topping: More banana, peanut butter or nut butter, chocolate chips, maple syrup.
- Storage: If you manage to have leftovers, store in an air tight container for up to a week in the fridge.
