Avocado toast is one of those trends that thankfully is not going away. It’s perfect for any time of the day, breakfast, lunch, a snack. It’s not just toast with some avocado smashed on it anymore. I like to top it with an egg but you can add salmon, microgreens, tomatoes & basil. Avocados are a great source of healthy fats. They are filling and help make this toast feel like a whole meal.

Some people have even been known to make sweet versions of avocado toast. The creamy texture and mild flavour of avocado lends well to all kinds of pairings. You could add orange segments or even some peach with a balsamic drizzle for a sweet and savoury combination. A little honey drizzle is a perfect way to add and enhance the natural sweetness of the avocado.

Ingredients for Avocado Toast:

  • 2 Slices of your favourite toast. Using a hearty grain bread makes for a great base.
  • 1 Ripe avocado
  • 2 Eggs or egg replacement like tofu scramble
  • Everything on It bagel seasoning

Tips & Tricks:

  • Toast: Make sure you toast the bread you choose well because the avocado if left on the toast will make it soggy. I like to use a thicker bread so their is more to absorb the the yolk with once you start cutting into it.
  • Toppings: You can add salmon, radishes, microgreens, hard boiled eggs, tomatoes, arugula, corn and anything else your heart desires.
  • Seasoning: I like to add everything on it bagel seasoning but you could add chili flakes, salt and pepper, fresh parsley.
  • Eggs: You can sup the eggs for a tofu scramble on tip or even some smashed chickpeas.
  • Avocado: You can tell that your avocado is ripe by pressing the sides. If it is still firm and hard to indent then it needs a few more days. If the avocado still has its stem on it you can remove it. If the whole left from the stem is green then the avocado is still a few days from being ready.

Directions

  • Toast your bread.
  • Fry your eggs in a pan over easy.
  • While eggs are cooking mash your avocado and spread it over your toast.
  • Season the avocado with salt & pepper and top with your cooked egg.
  • Add everything on it bagel seasoning for extra flavour.
