When I say this might be my new favourite salad I am not kidding. This blueberry apple walnut salad has it all. The crunch of the walnut, sweetness from the apple and blueberries, creaminess from the goats cheese all on top of a bed of delicious mixed greens. The sweet and tangy honey balsamic dressing really seals the deal on this salad.
The best part of blueberry apple walnut salad though is how little effort assembling it is. You don’t even have to chop up the lettuce. Just quickly chop up the apples and crumble the goats cheese. (please still clean your produce)
Ingredients:
- 2 cups spring mix
- 1 medium apple (about 1 cup, thinly sliced pieces)
- 1-2 oz goat cheese or gorgonzola
- 1 tbsp chopped walnuts
- 1/4 cup fresh blueberries
- 1 tbsp chopped fresh parsley
- Honey Balsamic Vinaigrette
Honey Balsamic Dressing (makes 6 servings)
- 1/4 cup light olive oil
- 2 tbsp balsamic vinegar
- 1 1/2 tbsp honey
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
Tips & Tricks:
- Prep in Advance: This is a great salad to prep before an event. The only thing to keep in mind is that the longer you wait after cutting up the apples the browner the will be come as the oxidize. The flavour is still great though. You can just add the dressing before you serve the salad.
- Add Protein: To make this salad heartier try adding some grilled chicken, chickpeas, or even some steak.
- Chopping the apples: A knife is always an easy choice but if you are making a larger batch an apple peeler will save a lot of time.
- Make it Vegan: Simply replace the goat cheese with a vegan version or omit it. Then use maple syrup instead of honey in the dressing.
