Cheddar cheese muffins are soft and delicious. Packed with lots of cheesy flavour. You can make these muffins super quickly with just a few simple ingredients.
For me these muffins are a real treat! I love Pão de queijo that was introduce to me by my brother in laws amazing Brazilian girlfriend. This gets a slightly similar chew factor very simply while having a nice crispy exterior. I highly recommend making these in place of a regular roll or cornbread. They pari great with soups and BBQ.
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon sugar (you can use a sugar substitute like stevia if you want)
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 2 1/2 cups shredded Cheddar cheese
- 1 large egg
- 1 cup milk
- 6 tablespoons butter melted
Tips & Tricks:
- Cheddar Cheese: You can use pre-shredded cheese but they typically have a coating on them prevent the individual pieces from sticking to each other. Grating your own cheese will have a better result.
- Storage: Keep the muffins stored in an air tight container for 3-5 days. These muffins are best enjoyed warm when the cheese is a little melty. You can also freeze them for up to 3 months. Just make sure they are completely cooled off before freezing them.
- Serve with any meal instead of a standard roll or even enjoy them for breakfast. Serve with soup, stew or BBQ.

This recipe is inspired by “A Good Girls Guide to Murder”. In the book the main character Pip makes muffins for Ravi so that he will be more wiling to provide an interview. He later describes the muffins as tasting like cheese. While we are never told what the muffins should have tasted like I decided to make the cheese flavour into a good thing.
