This chocolate chia seed pudding is vegan, gluten-free, paleo, and dairy free! It’s completely customizable with any toppings you can dream of.
Ingredients:
- 3 tbsp chia seeds
- 2 tsp cocoa powder
- 1 cup almond milk (oat milk or milk of choosing will work great a replacement)
- 1 tbsp maple syrup
- fruits of choice to top (I used raspberries)
Tips and Tricks:
- Chia Seeds: Make sure you have fresh chia seeds. Old or expired seeds will not expand as much.
- Thickness of Pudding: If the pudding is to thick add some more almond milk or maple syrup. If the pudding is too runny you can add more chia seeds.
- Time: The longer you can leave the chia seeds to sit and absorb the liquid, the thicker they will be.
- Toppings: Raspberries, strawberries, blueberries, almonds, peaches and many others will partner well with the cocoa powder taste.
- Almond Milk: homemade almond milk tends to be thicker so add less chia seeds at the beginning to achieve the desired pudding texture.
