Simple snacks are always the best ones. These chocolate filled raspberries are easy to make and very refreshing. They give you the chocolate fix you have been craving with some added fruit. You can make a little or as much as you desire. Just make sure you have the freshest berries, smooshed berries are hard to fill.

Ingredients:

  • 1/2 pint Raspberries
  • 1/2 cup semi sweet chocolate chips
  • 1/2 Tbsp coconut oil (melted)

Tips Tricks:

  • Raspberries: Make sure you have fresh berries that have not been squished so that you can still fill them.
  • Chocolate: Semi Sweet or dark chocolate makes the best raspberries in my opinion. The raspberries are naturally sweet and with a milk chocolate is can be overly sweet.
  • Melting the Chocolate: Add your chocolate chips to a microwave safe dish. Heat them in 30 second intervals stirring in between each interval. Stop microwaving when everything is almost completely melted, the residual heat will finish the melting. Then you can add the coconut oil in and mix everything together.
  • Storage: Keep in an airtight container for up to a week in the fridge.

Ingredients

  • 1/2 pint Raspberries

  • 1/2 cup semi sweet chocolate chips

  • 1/2 Tbsp coconut oil (melted)

Directions

  • Start by washing your raspberries. Use a paper towel to pat them dry.
  • In a microwave safe dish add the chocolate chips. Microwave in 30 second intervals stirring between each time. Once the chocolate is 95% melted add the coconut oil and give it a good stir.
  • Using a small spoon scoop the chocolate into the opening of the raspberries. Make sure they are not overflowing.
  • Place the filled raspberries on a sheet tray and add to your freezer for 10 mins. If the chocolate is not set after freezing place the tray back in the freezer for another 5 minutes. You do not want the whole berry to freeze just for the chocolate to set.
  • Store the finished raspberries in an airtight container in your fridge.
