This recipe is insanely delicious you will want to eat the whole pan. It’s perfect served alongside salads to add some heartiness to the meal. It’s perfect for all kinds of eaters, vegan, vegetarian even dairy free!

Ingredients for Smashed Potatoes:

  • 1 tsp sea salt
  • 1.5 lb baby potatoes (colour of choice)
  • 2 tbsp olive oil , more if desired
  • pinch coarse sea salt , for sprinkling
  • 1/4 cup parmesan cheese
  • 1 tbsp chives *optional

Tips & Tricks:

  • Cooking the potatoes: Make sure that your potatoes are fork tender before trying to smash them otherwise they will not flatten.
  • Smashing the potatoes: You can use the bottom of a mason jar to smash the potatoes or to get some crispier edges use some forks. The thinner the potatoes are smashed the crispier they will become.
  • Toppings: Chives, parsley, parmesan cheese, chimichuri sauce and any other sauce you might want.

Ingredients

  • 1 tsp sea salt

  • 1.5 lb baby potatoes (colour of choice)

  • 2 tbsp olive oil , more if desired

  • pinch coarse sea salt , for sprinkling

  • 1/4 cup parmesan cheese

  • 1 tbsp chives *optional

Directions

  • Preheat oven to 400F/200C, and line a baking sheet with parchment paper.
  • Bring a large pot of water with the salt to a boil and add the baby potatoes. Boil until the potatoes are cooked through, 20 mins. Drain and transfer to the baking sheet.
  • Smash each potato with a glass and drizzle with 2 to 3 tbsp of olive oil. Sprinkle generously with coarse sea salt. Bake for 40 to 45 mins, or until the potatoes are crispy and golden brown.
  • Transfer smashed potatoes to a serving plate and sprinkle chives and parmesan cheese on top. Or serve with dipping sauce of choice.
