Looking for a low carb lunch or snack option? These cucumber egg salad boats are a great option. Using the cucumber as your “bread” substitute provides a nice refreshing crunch to every bite. If you someone you know is low carb or even keto this recipe will be perfect for them. One large english cucumber will make enough for 2 servings.

Ingredients

Ingredients:

  • 5 hardboiled eggs
  • 1 english cucumber
  • 2.5 tbsps of mayonnaise
  • 1 teaspoon of Dijon
  • Everything but the bagel seasoning
  • Salt & pepper to taste
  • Optional* you can add fresh herbs on top
  • A chopped pickle is also a great add.

Tips & Tricks:

  • Cucumbers: Make sure to get all of the middle seeded part of the cucumber out so that you can easily fill it with egg.
  • Alternates: Not a fan of cucumbers try using a bell pepper hallowed out or an avocado.
  • Eggs: I find that hard boiling fresher eggs makes them easier to peel.
  • Meal Prep: If you are going to make this in advance keep the egg salad in a container until you are ready to assemble. The cucumber should be cut only when you are ready to eat.

Quick and easy cucumber egg salad boats are a great low carb lunch option! Packed with all the usual deliciousness of an egg salad sandwich but with an added crunch.

Ingredients

  • 5 hardboiled eggs

  • 1 english cucumber

  • 2.5 tbsps of mayonnaise

  • 1 teaspoon Dijon mustard

  • Everything but the bagel seasoning

  • Salt & pepper to taste

Directions

  • Hard boil your eggs for 10 to 12 minutes (the yolk should be fully set). While they are boiling prepare and ice bath for your eggs so the cooking process can be stopped as soon as the time is up.
  • Peel your cooled eggs and cut into little pieces or use a fork to break them up. Salt and pepper to taste, add mayo of choice and the Dijon.
  • Mix well. Scoop out the seeds of your cucumber once you have a cut it in half and don’t discard them because you can add them to smoothies or make your own yogurt dip.
  • Fill your boats with the egg-salad and enjoy. Top with your desired seasoning. I like everything but the bagel seasoning.
