French silk pie I believe is named because of the smooth and rich quality that the chocolaty filling has. If you are a chocolate lover this is going to be your new favourite pie. It might require some waiting and a few extra dirty dishes but this pie is something special. With an Oreo crust, semi-sweet chocolate filling, homemade whipped cream, and chocolate shavings. This recipe will be a crowd favourite.
Ingredients:
- 20 Oreo cookies
- 3 tablespoons butter melted
For the filling
- 1 1/3 cups granulated sugar
- 4 large eggs
- 8 ounces bittersweet baking chocolate, melted
- 2 teaspoon vanilla extract
- 10 tablespoons butter, at room temperature
- 1 1/3 cups heavy cream
- 2 tablespoons powdered sugar
For the topping
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Chocolate shavings or cocoa powder
Tips & Tricks:
- Crust: You can use a regular crust instead of an Oreo crust if desired but I find this adds a nice extra kick of chocolate flavour. Make sure the Oreos are not double stuffed.
- Cooking Your Eggs: Make sure that you get a thermometer to watch the temperature of the egg and sugar mixture. At 160º F you can turn off the heat. Since the eggs are fully cooked this recipe is safe to serve to everyone.
- Cooling: Be sure to let your pie cool for at least 6 hours or overnight or it will not be set up enough to slice and serve.
- Equipment: You will need a food processor as well as a handheld mixer to make this recipe.
