Want a perfect snack that you can assemble for your kids or enjoy as an appetizer with friends. Peanut butter granola cups are made of 3 simple ingredients you likely already have. Fill them up with your favourite yogurt and an assortment of fresh fruit for a delicious treat!

This recipe is very hands on and would be a great activity to make as a family. Everyone can customize their own individual yogurt cup. The base of this recipe is also vegan and can easily be filled with vegan yogurt to appeal to anyones dietary needs.

Ingredients:

  • 2 cups oats
  • 1/2 cup peanut butter
  • 1/2 cup maple syrup
  • pinch of salt

  • yogurt (dairy free if your vegan)
  • strawberries
  • raspberries
  • blueberries
  • blackberries
  • mango
  • kiwi

Tips & Tricks:

  • Coconut Oil: Line your muffin pan with coconut oil to make sure that the granola doesn’t stick to the pan. You can also rub coconut oil on your hands for when you are filling the the pan so that the oats do not stick to your hands. Pack the granola mixture into your pan ticghtly as well to help it stay intact.
  • Baking: Let the oats fully cool after baking (at least 30 mins) if you remove them too soon they will break apart.
  • Storage: Keep the granola cups unfilled and in the fridge for up to 3 days. The yogurt would make these cups too soggy for storing. I do not recommend freezing these they will not stay together when defrosted.

Granola cups are a perfect snack that you can assemble for your kids or enjoy as an appetizer, made of 3 ingredients you likely have already.

Ingredients

  • 2 cups oats

  • 1/2 cup peanut butter

  • 1/2 cup maple syrup

  • pinch salt

  • Toppings
  • yogurt of choice

  • Fresh fruit (blueberries, strawberries, blackberries, ect.)

Directions

  • In a large bowl, combine the oats, peanut butter, and maple syrup. Mix them well.
  • Grab a muffin pan and grease six muffin holes with coconut oil. Do not skip this step.
  • Split the granola filling evenly between the six muffin tin compartments.
  • Next, use your fingers or a spoon to shape the granola into little cups, pressing to create a hollow middle.
  • Bake the granola cups in the oven for 20 minutes at 350F.
  • Give the cups at least 30 minutes to cool off before removing them from the muffin pan. Otherwise they might fall apart.
  • When they are ready to be removed from the muffin pan, gently slide a butter knife or a fork along the edges of the cups, to loosen them.
  • Take out the granola cups, fill them with yogurt and add sliced fruit on top. Enjoy!
