Need a quick snack or perhaps a low carb lunch option. Mini Egg BLTs are an easy way to get in some added protein in a delicious way. They are super fun to share with your kids and make a great after school snack option. You can pre-prep all of the ingredients in advance for easy assembly and have your meal ready in minutes.

  • 6 Hardboiled eggs
  • 4 strips of bacon
  • 1 beefsteak tomato
  • 1-2 tbsp mayo
  • Lettuce
  • Salt & pepper
  • Everything bagel seasoning

Tips & Tricks:

  • Hardboiled Eggs: Hard boil your eggs to your desired yolk consistency. Want it a little bit jammy go for a 6 minute egg. Just be sure that you egg white are fully set. To stop the cooking process from continuing place the eggs in a bowl of ice water after boiling.
  • Mayo: Be generous with the mayo. An egg will not absorb any of the mayo like bread would and it help balance the flavours since the egg halves are pretty thick.
  • Prep Your Ingredients: You can cook the bacon and store it in your fridge until you are ready to eat. The same goes for the eggs.

Mini egg BLTs are the perfect low carb snack or lunch option. You and your kids will have some much fun enjoying this twist on a classic!

Ingredients

  • 6 Hardboiled eggs

  • 4 strips of bacon

  • 1 beefsteak tomato

  • Lettuce

  • Salt & pepper

  • Everything bagel seasoning

  • 1-2 Tbsp Mayo

Directions

  • Hardboil 6 eggs on your stove top for the desired yolk consistency. (For this recipe i prefer to not have a runny yolk so i will go for a 12 minute egg). Chill your eggs in an ice bath after to stop the cooking process.
  • While your eggs are boiling begin cooking your bacon. Once cooled cut the bacon into small strips about the length of your egg.
  • Cut your tomato and lettuce into similar sized pieces as well. Once everything is prepared peel your eggs and cut them in half length wise. Spread mayo on either side of the egg. Then assemble your egg like a blt sandwich.
  • Use a took pick to keep everything together and sprinkle with your desired seasoning. Everything but the bagel seasoning is my favourite.
