Valentines Day is the perfect time to spoil your special someone. A homemade fluffy stack of pancakes is a great way to wake up in the morning. The pink ombré is a nice touch for the holiday. These ombré pancakes are ready in under 30 mins and taste so much better.

Pancakes are one of the ultimate breakfast foods. You likely have all of the ingredients already in your house. You can customize each pancake to your liking, adding blueberries, chocolate chips, banana, strawberry, peanut butter and more.

Ingredients for Ombré Pancakes:

  • 2 cups all-purpose flour
  • 4 tbsp sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1 1/2 cups milk
  • 4 tbsp butter, melted and slightly cooled
  • 2 tsp vanilla extract
  • Red food colouring

To make this recipe vegan replace the egg with a flax egg, apple sauce, or an egg replacement. The milk can be substituted from almond or oat milk. Lastly the butter can be vegan butter instead.

Tips & Tricks:

  • Pancake Batter: Don’t over mix the batter. Your initial mix will have a few lumps in it. Let the pancake batter sit for a few minutes after mixing this will allow the batter time to expand and develop bubble. The more times you mix in food colouring to the mixture the less fluffy it will be so keep that in mind for how many layers you want your pancake stack to have.
  • Colouring: Start by adding a drop of food colouring to the batter and cooking the initial pancake. For every following pancake add a few additional drops of food colouring to make the pink colour more saturated.
  • Getting similar sized pancakes: Use a measuring cup (I recommend 1/4 cup) to add the same amount of batter to the pan each time.
  • Cooking the pancakes: after adding the batter to your hot pan wait until bubbles form on the surface. The edges of the pancakes sould be firm and matte in finish.
  • Food Colouring: You can adapt this for any occasion and use whatever colour food colouring you like.

Ingredients

  • 2 cups all-purpose flour

  • 4 tbsp sugar

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 1 large egg

  • 1 1/2 cups milk

Directions

  • Combine the dry ingredients (flour, sugar, baking powder and salt) in a large bowl.
  • In another bowl, combine the egg, milk, butter and vanilla extract.
  • Add the wet ingredients to the dry ingredients and gently fold them together until well combined, It might be still a little lumpy. You don’t want to over mix them or could deflate the batter which will make it less fluffy. The batter should be relatively thick, but easily pourable.
  • Set the batter aside to rest while you heat up a pan, 5-10 minutes. Gently stir the mixture one more time to remove any clumps.
  • Heat a non-stick pan over medium-low heat and melt a little butter to grease it. Pour batter onto the pan and let it spread out into a round pancake.
  • Allow to cook until bubbles appear on the surface and the edges are set, then flip and cook until golden.
  • Continue cooking with the remaining batter.
