Rainbow fruit salad is like summer in a bowl. All of your favourite fruits tossed together with this bright honey lime dressing. This recipe make a huge bowl of fruit salad that is perfect for any bbq or family get together. You can easily adjust the recipe to include more of your favourite fruits and less of others.
This honey lime dressing is the perfect topping your rainbow fruit salad. Made of only 3 simple ingredients you probably already have.
Ingredients:
- 1 lb fresh strawberries, chopped
- 1 lb chopped fresh pineapple,
- 12 oz fresh blueberries
- 12 oz red grapes, sliced into halves
- 4 kiwis, peeled and chopped
- 3 mandarin oranges*
- 2 bananas, sliced (optional)
Tips & Tricks:
- Mandarine Orange: If you cant get mandarine or clementines you can use a regular navel orange and simply cut the segments in half.
- Make In Advance: You can chop up all the fruit (minus the banana) before your event or dinner and store it in the fridge for a day. Keep the dressing separate though as this will add additional moisture and make everything softer over time. The banana should be added just before serving as to stop it from turning brown.
- Make sure the fruit is repined. If you use unripe fruit it will be harder to cut up and less flavourful.
- Frozen Fruit: I do not recommend using frozen fruit in this recipe. When it thaws out it will become very soft and break apart instead of staying intact.
