Mimosas are the classic getaway drink. You can have them for breakfast on the weekend or in celebration of a milestone in your life. Raspberry Mimosa’s are an elevated version of that experience.

Every year for Christmas my husbands side of the family celebrates with mimosas from the moment they arrive at my house for presents in the morning to dinner later that evening they consistently drink mimosas. We sip on them all afternoon while enjoying time together. Im not a big drinker but a raspberry mimosa is the kind of drink ill make an exception for. Keep in mind that these mimosas have no orange juice in them so they are significantly stronger than traditionally.

Other Flavours

  • Orange: The traditional mimosa is made with a base of orange juice.
  • Strawberry: You can puré some cooked strawberries or use a strawberry syrup.
  • Grendine: To get the sweet cherry flavour add some grenadine.

Mock Raspberry Mimosa

You can get a similar experience by replacing the champagne with some clubs soda or flavoured carbonated water. You could also add your favourite soda. Sprite and seven-up mixed with raspberry is a very refreshing substitute.

Best Type of Champagne

Interestingly enough the best champagne to mix with juice isn’t actually champagne at all. A sparkling wine will mix the best with juice like Prosecco or Cava. These are also considerable more affordable. Don’t waste a fancy bottle of expensive champagne on a mixed drink. A standard bottle of Prosseco is usually only $12-15.

Ingredients

  • 2 cups fresh raspberry

  • ¼ cup granulated sugar

  • 1 bottle champagne

  • Mint leaves to garnish

Directions

  • In a small saucepan, heat raspberries with sugar over medium heat until they’ve broken down and sugar has completely dissolved. Use a whisk to help break down the berries.
  • Remove from heat and puree in a blender or small food processor. Press the mixture through a strainer and set aside to cool down.
  • When ready to serve, add a good dash of raspberry syrup to each champagne glass. Pour champagne over each and top with raspberries and mint. You can also drop a few raspberries directly into your mimosa cocktails!
