Vegan oil-free roasted pizza chickpeas are a great snack, topping for your salad, or dinners. While they don’t have any pasta sauce or cheese involved, all of the classic Italian seasoning components. Its super crunchy and so good that I immediately ate the whole jar full after making this recipe.
Ingredients:
- 2 cups chickpeas cooked or canned, drained well
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried chili powder
- 1 teaspoon garlic powder
- ¼ teaspoon sea salt
- Black pepper to taste
- *Optional-2 teaspoons melted coconut oil (see notes)
Tips & Tricks:
- Oil: The coconut oil is completely optional but if you use it the chickpeas will be considerably crispier. The non oiled kind have a tendency to be more chewy than crispy all the way through.
- Chickpeas: If you want to roast you chickpeas for longer try removing the chickpea skins first so that they do not burn in the process.
- Aquafaba: Keep the liquid from your can of chickpeas as it can be used in lots of other recipes. You could even make a vegan chocolate mousse.
- Canned vs Dried Beans: While canned beans are convenient dried beans are significantly healthier. Canned foods are exposed to extreme heat and processing, reducing their nutritional value and most canned foods are made with BPA in their lining. You can find out more about canned good here.
Cooking Beans at Home:
- Add a few cups of beans to bowl and cover with water. Let them sit overnight to soak.
- Strain the beans and transfer the beans to a medium-large pot, cover with new water by 2-3 inches partially cover. Also make sure there is a few inches between the top of the pot and the water level to avoid boiling water from spilling out.
- Bring the water to a boil and then reduce to a simmer for an hour or two. Check in periodically and add more water if needed.
- Remove a bean to check if it is soft when smushed or cut in half. This is how you will know it is done cooking.
- If the beans start breaking open and their skins are falling off, they are also likely they’re done.
