Spinach Dip is my all time favourite dip. It checks all the boxes, quick, cheesy, melty, luxurious and sure to make anyone who comes over happy. Since first making this recipe it as become a staple in our house. We served this for Christmas and the Super bowl. It pairs well served in a bread bowl or with a variety of veggies on the side. My favourite is dipping a crisp mini cucumber into it while it’s still warm.

Ingredients & Substitutions:

If you are dairy free or vegan i don’t recommend making this recipe. While you can substitute the cheese for a dairy free alternative it is the main focus and flavour of this dish. That is not to say that it can not be done and also be delicious.

  • 8 ounces cream cheese softened
  • 1 cup sour cream
  • 6 ounces fresh spinach leaves
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup grated parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese divided use
  • 1 tablespoon chopped parsley
  • bread, crackers and vegetables for serving
  • cooking spray

Steps to Make Spinach Dip:

  1. Steam or sauté the spinach until wilted. Let cool, then wring out all the excess water. Cut up the spinach.
  2. Preheat the oven to 375 degrees F. Coat a small baking dish or skillet with cooking spray.
  3. Place the room temp cream cheese, sour cream, cooked spinach, garlic, salt, pepper, parmesan cheese and 3/4 cup of the mozzarella cheese in a bowl. Stir until well combined.
  4. Spread the spinach mixture into the prepared dish. Top with remaining mozzarella cheese.
  5. Bake for 20 minutes or until dip is bubbly and cheese is melted. Turn the oven to broil and cook for 2-3 more minutes or until cheese starts to brown.
  6. Sprinkle with chopped parsley (optional) then serve with bread, crackers and vegetables.

Tips & Tricks:

  • Cream Cheese: Make sure you let your cream cheese come to room temperature before making this recipe. If you try and mix before it is softened it will cause big chunks to remain in the dip. Cream cheese does not respond well to being microwaved either. If you choose to microwave it, use 30 second intervals and keep a close eye on it.
  • Baking: Bake the dip until all of the cheese on top has melted and began to brown. The amount of time this will take varies based on your oven and personal preference for crispiness.
  • Spinach: When ringing out the spinach to remove excess moisture use a paper towel or cheese cloth to ease the process. Alternatively you can wring the spinach out with your hands.
