Strawberry Yogurt Bark is the perfect afternoon snack. It’s cold and refreshing packed with sweetness from the strawberries, blueberries and granola. It takes only a few minutes to assemble and pop in your freezer.
Fun fact it has been recently pointed out to me that “Greek Yogurt” was actually originally from turkey so it should be called “turkish yogurt”.
Ingredients:
- 1 cup vanilla greek yogurt
- 1 cup strawberries
- 1-2 tbsp shredded coconut
- 3 tbsp Granola
- 1/2 cup blueberries
Tips & Tricks:
- Strawberry Yogurt: If you don’t have strawberry yogurt you can blend some strawberries together with vanilla or plain greek yogurt.
- Spreading the Yogurt: Don’t make the layer of yogurt too thin other wise it will not be able to hold the toppings and will break apart into much smaller pieces instead of maintaining larger chunks.
- Toppings: Add any fruit you have, nuts, chocolate chips, and oats on top of the yogurt. You can press the toppings into the yogurt a little to help secure them as well.
- Protein: Add some protein powder to the yogurt and mix until well combined before spreading it out on a lined baking sheet. I recommend vanilla or berry flavoured for this recipe.
- Make it Vegan: Simply swap out the dairy yogurt and use a coconut or non dairy version instead. If you are using pre-made granola just make sure it is vegan too.
- Storage: After the initial freeze break the bark up into pieces and add to a ziplock or air tight container to help it avoid freezer burn. These should last a few weeks in the freezer.
