This is a twist on asian inspired turkey lettuce wraps. This recipe is easy and quick while being low in carbs and overall super flavourful. The turkey is tender and all the veggies are crisp and well seasoned. This recipe work as an appetizer or for dinner!

When you are on the hunt for healthy recipe it shouldn’t mean that you have to compromise on flavour. On a busy weeknight you can throw everything into one pan and be ready in under 30 minutes. Plus one pan means less dishes for you to do.

Ingredients

Ingredients for Turkey Lettuce Wraps:

  • 1 pound ground turkey (ground chicken works well too)
  • 1/4 cup shredded carrots (I like to buy the pre cut matchstick carrots at the store to save time)
  • 6 ounce mushrooms coarsely chopped
  • 2 green onions chopped
  • 1 clove garlic minced
  • 3 Tablespoons hoisin sauce. Substitute with Bean paste, garlic teriyaki or you can add extra soya sauce with a little brown sugar of the missing sweetness.
  • 2 Tablespoons low sodium soy sauce
  • 1 Tablespoon rice wine vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons sriracha
  • 12 butter lettuce leaves (Boston and Iceberg lettuce will also work!)

Tips and Tricks:

  • Hot Sauce: I used sriracha as the source of heat in this recipe. You can substitute it for some chili oil, or your favourite hot sauce.
  • Green Onions: Add you green onions closer to the end of the cooking process. It will help them stay crisp and crunchy.
  • Lettuce: Butter lettuce that is still attached to the root is perfect for this recipe. Each leaf acts like a little cup. You can layer multiple leaves to ensure that the turkey mixture and liquids don’t escape. Butter lettuce is soft and provides a nice texture to the recipe.
  • Storing Leftovers: If you are planning to eat this during the week simply place it in an airtight container in the fridge for 3-5 days. When ready reheat the turkey mixture and add it to a fresh piece of lettuce.
  • Equipment: I used the always pan to make this meal. The non stick is great for reducing the sauce with.

Ingredients

  • 1 pound ground turkey

  • 1/4 cup shredded carrots

  • 6 oz mushrooms coarsely chopped

  • 2 green onions chopped

  • 1 clove garlic minced

  • 3 Tbsp hoisin sauce

  • 2 Tbsp low sodium soy sauce

  • 1 Tbsp rice wine vinegar

  • 2 tsp sriracha

  • 1 tsp sesame oil

  • 12 Butter lettuce leaves (Boston and Iceberg lettuce will also work!)

Directions

  • In a medium-sized skillet over medium-high heat, add the ground turkey. Cook and break it up until it is almost fully cooked throughout. Add carrots, mushrooms, and garlic. Continue to cook for 1-2 minutes until turkey is cooked and veggies are tender add your green onions.
  • Add the hoisin sauce, soy sauce, rice wine vinegar, sesame oil and sriracha. Stir and let simmer for 1-2 minutes. The sauce should cling to the meat. Serve on butter lettuce leaves.
