It’s valentines day and weather you are celebrating alone or with a loved one you can never go wrong with cookies. These valentine sugar cookies are soft, buttery, and delicious. Plus they won’t spread so they keep whatever fun shape you cut them into. You don’t even have to chill them in the fridge. You can whip up some royal icing and have fun decorating each cookie with fun sayings or bright colours. If you package them up these would even be great treats to hand out to friends or for a bake sale.

Ingredients:

  • 1 cup & 4 tbsp butter, softened at room temp
  • 1 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 3 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine salt

Royal Icing:

  • 3 ounces (6 tablespoons or 3 large) pasteurized egg whites
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Tips & Tricks:

  • Scrape the Bowl: You want to make sure that no pockets of unmixed sugar or butter are left.
  • Roll You cookie Dough Evenly: Make sure when rolling out the dough that there are no thin spots. Those spots will bake quick and start browning first.
  • Cookies Spreading: The tricky thing with cookies is all the butter. If it is super hot out or humid in your kitchen these cookies will have a higher chance of spreading. You can chill them for 20-30 minutes before baking. Another reason for spreading could be your oven temperature. Make sure it is set to 325º F if you are not sure you can also get an oven thermometer to check. Also be sure that you correctly measured the flour.
  • Cooling: Let the cookies cool completely before you attempt to decorate them.

Ingredients

  • 1 cup & 4 tbsp butter, softened at room temp

  • 1 egg

  • 1 egg yolk

  • 2 tsp vanilla extract

  • 3 cup all purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp fine salt

  • Royal Icing
  • 3 ounces (6 tablespoons or 3 large) pasteurized egg whites

  • 1 teaspoon  vanilla extract

  • 4 cups powdered sugar

Directions

  • Preheat the oven to 325 degrees. Prepare a baking sheets with parchment paper or silicone baking mat.
  • In a large bowl, beat the butter & sugar and light and fluffy using a hand mixer or a stand mixer.
  • Add in the egg, egg yolk & vanilla. Beat until well combined.
  • In a separate medium bowl, whisk together the flour, baking powder & salt.
  • Add half of the flour mixture to the butter mixture and gently mix on low speed. Once the flour is about absorbed, add the remainder of the flour mixture and mix until just combined. Do not over mix and be sure to thoroughly scrape the sides and bottom of your bowl every so often while mixing.
  • To roll out the dough, start with about 1/4 of the dough at a time and roll out on a lightly floured surface (ensuring your rolling pin is also lightly floured).
  • Roll to 1/4 inch thickness. Cut using your desired cookie cutters. Place the cookies on the prepared tray. If you are decorating with sprinkles, this is when you would sprinkle your cookies.
  • Bake for 11-13 minutes. Since all ovens vary, I suggest starting your timer with 10 minutes and see how they look. These cookies are done when they are barely golden brown on the edges.
  • Allow to cool on the pan for 5 minutes and transfer to a baking rack to finish cooling.
  • Mix all of the royal icing ingredients together. If it is too runny add more powdered sugar and if it is too thick add a small splash of water.
  • Add the icing to a piping bag with a small round tip and begin decorating your cookies. Enjoy!
